Cottage Cheese Protein Pancake

Cottage Cheese Protein Pancakes

Preparation Time: 5 minutes

Cooking Time: 10-15 minutes

Total Time: 20 minutes

Serves: 2

Ingredients:

  • 3/4 cup low fat cottage cheese
  • 2 whole eggs + 2 egg whites
  • 1/2 cup protein powder* (see notes)
  • 1/2 teaspoon baking powder
  • 1 tsp vanilla essence
  • Oil to fry pancakes* (see notes)

Directions:

  1. Place all ingredients in a blender andblenduntil well combined.
  2. Spray a frypan with oil (coconutoilrecommended).
  3. Pour pancake mix into a moderate-hot frypan.
  4. Cook for 1-2 minutes on each sideuntilgolden.

Notes:

  • You can substitute protein powderwithcoconut flour or high-protein flour.
  • You can substitute coconut oil with oliveoilor butter.
  • Serve with Greek yogurt and blueberries.
